Cappuccino Cookies
Coffee. I love the stuff. It smells awesome, tastes awesome and my morning cup makes me feel like I’ve got my shit together. I don’t, but it makes me feel like I do. So it really was a no-brainer to make it into a cookie flavour so I could have my coffee and eat it too….
- 1 cup cashew butter
- 1 egg
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 tablespoon coconut sugar
- Pinch sea salt
- 1 1/2 tablespoons ground coffee
- 1/4 cup cacao nibs
- 1/4 cup pecans, roughly chopped
- 3 tablespoons coconut flour, sifted
Preheat oven to 180 degrees Celsius.
Mix together the cashew butter, egg, maple syrup, vanilla, salt, baking soda and coconut sugar.
Add the cacao nibs and ground coffee and combine.
Fold through the chopped pecans.
Sift in the coconut flour and mix well.
Let the mix sit for a few minutes to thicken.
Scoop out big spoonfuls onto a oven tray lined with baking paper.
Bake for 13-15 minutes.
Makes 12 cookies.
TIP
because the coconut flour thickens the mixture, I find adding it last helps you get everything else combined well while the mix is still reasonable runny.
the cookies will seem quite soft and spongy to the touch when you take them out of the oven, but harden up with cooling.
